[ ق َ / ق ِ م َ / م ِ زَ / زِ ] (اِ مرکب ) خورش قیمه و گوشت بسیارریزه شده (یا چرخ کرده ) که آن را سرخ کنند و خورش سازند یا بصورت قلقلی درآورند. ما هم کمی تا قسمتی به حرف ایشان گوش دادهایم، البته به حرف مادر گرامی و سایز زنان کدبانوی اصفهانی هم گوش کردهایم. فقط باید یک نکته کوچک را گوشزد کنم و آ این است که نسخهی خودمانی بنده بر اساس آنچه که اصفهانیها میپزند تنظیم شده است، در بسیاری از شهرهای ایران قیمهریزه یا کوفتههایی شبیه آن پخته میشود که تا اندازهای شبیه یا متفاوتند و قطعاً خوشمزه هم هستند. کباب شامی من هم در واقع نقش کنار گل است و این جا هنرپیشهی نقش دوم،چون با همان مایهی قیمهر...
