I threw this together for dinner last night on a whim & it paid off in spades. The stew itself is totally vegan, & you can serve it with whatever starchy goodness gets your motor revving; I made buttery, milky mashed potatoes, but it would be amazing over biscuits, wide noodles, rice, whatever.
