Prende il nome dalle CARCERI. U n tempo, infatti, il carcere di Pistoia e i macelli erano vicini (attualmente in via dei Macelli, 13) e chi lavorava la carne usava buttare i pezzi meno venduti, quelli “di scarto”, nella Brana, un piccolo fiume che scorre lungo le mura della città vecchia. I galeotti chiesero e ottennero che gli scarti del vitello, conosciuti anche come rigaglie, potessero esser destinate a loro, per farne una zuppa.
