If you have a vegetable garden and grow zucchini, you'll very much understand! These summertime veggies can take on a life of their own and take over your vegetable patch! Some people like them raw. My mother slices them and tosses them into her salad. I have to eat my zucchini cooked, preferably grilled.  A few weeks ago I had Parmesan zucchini fries at one of my favorite restaurants. I wanted to create something like that but healthier. I wanted a Parmesan zucchini fried that wasn't fried. I figured I could easily try to create something similar on my grill pan. And I did.
