PAN- ROASTED BRUSSELS SPROUTS & SQUASH Serves 2 Ingredients: • 3 tablespoons extra-virgin olive oil • 1/2 pound Brussel Sprouts, trimmed and cut in half • 1/2 red onion, cut into 1-inch pieces • 1/2 teaspoon black pepper • 1/4 teaspoon salt • 3 cups diced peeled butternut squash • 3 cloves of garlic, minced or crushed   HEAT the olive oil in a large skillet over medium heat and swirl to coat the bottom of the pan.
