Hal ini di sebabkan karena rata-rata sifat tempe mendoan adalah menyerap banyak minyak, sehingga saat memegangnya menjadi lengket di tangan serta tidak nyaman di mulut dan gatal di tenggorokan. Untuk mengatasi masalah ini dalam membuat adonan tepung untuk membuat mendoan gunakan campuran tepung terigu dan tepung beras dengan perbandingan dua banding satu , yakni 2 kg tepung terigu, 1 kg teping beras. Pemakaian tepung beras sebagai campuran tepung terigu akan membuat tekstur gorengan menjadi lebih garing dan tidak terlalu menyerap banyak minyak. Pada saat akan menggoreng adonan mendoan, terlebih dahulu panaskan minyak goreng kedalam wajan besar, usahakan wajan tersebut memiliki daya tampung minyak yang cukup banyak.
