Grazie a quest’unione, infatti, l’uomo poté apprendere, nella città di Mirandola (provincia di Modena), le antiche tecniche di lavorazione del Parmigiano Reggiano – risalenti al XII secolo, per poi importarle nelle sue terre natie. A partire dal 1926, dunque, data a cui si fanno risalire le prime forme di Grana Trentino (nonché le prime fotografie storiche), Marchesi cercò di riprodurre le specialità dell’arte casearia imparate in terra emiliana, in un caseificio della Valle di Non, a Cloz.
