Nach den ersten Versuchen gab ich entnervt auf, weil der Sauerteig und ich uns einfach nicht verständigen konnten. Das heisst, ich habe nicht begriffen, was da genau passiert, wann ich wie reagieren soll und muss. Sehr spontan entschied ich mich für den Besuch eines Sauerteig-Basis-Kurses im Mühlerama , beim Bahnhof Tiefenbrunnen in Zürich. Kursleiter Magnus Zwyssig, sunday__bread hat mir neuen Schub gegeben und ein paar Fragezeichen gelüftet. Simsalabim und ich zog wunderbares Brot aus meinem heimischen Ofen. Etwas dass mich aber beim Brotbacken mit Sauerteig immernoch gehörig nervt, ist das Wegschmeissen von hochwertigen Zutaten. Da man beim Füttern des Sauerteiges immer nur einen Drittel des Ansatzes weiterverwendet, entsorgt man bei jedem Schritt wertvolles Mehl und darüber ärgere ich mich sehr. Ic...
