Realizzata sia nella versione classica che aromatizzata alla nocciola vale la pena provarla. ROTOLO DI MOUSSE ALLA NOCCIOLA Per la pasta biscotto alla nocciola : 4 uova 150 g di zucchero 90 g di farina 40 g di nocciole tostate e tritate finemente un pizzico di sale Separare i tuorli dagli albumi, sbattere i tuorli con metà dello zucchero e aggiungere la farina setacciata le nocciole ed il sale.  Montare a neve gli albumi con l’altra metà di zucchero e incorporare al composto di farina e uova. Foderare una teglia quadrata (32 cm) con carta da forno e versare l’impasto, infornare a 180° per circa 10 min. Una volta cotto arrotolato caldo con uno strofinaccio bagnato e strizzato e lasciarlo raffredd...
