There’s nothing more comforting than pasta, especially homemade pasta. Along with bread and growing my own vegetables, making pasta belongs in that special category, the ikigai that gives purpose to life. It’s not like opening a packet of the dried stuff and putting the timer on. Saffron egg pasta, today’s chosen pasta, was a joy to make and very comforting to eat. I included a sauce of mussels, fennel fronds, garlic and chilli and enriched the mussel juice and wine sauce with a little butter to thicken it.
