The inspiration behind this is not just making something sinfully good, but making it with a key ingredient that no one would have guessed or used: banana peels. Food waste is a big problem. It’s not just about the food you don’t finish. There is pre-consumer and post consumer food wastes. The most obvious pre-consumer waste examples are spoilage, piths, rinds peels or ugly ingredients being discarded before it reaches the market. And humans are generally bad at managing this waste. Or have terrible incentives being set to manage it well. So we came up with an incentive to use up banana peels to give this bacon jam a familiar flavour profile that helps accentuate the smoky, chunky pieces of bacon.
